I am very excited though about how healthy it actually was. Lately lunch has been consisting of a few Vienna sausages shared with Ashlyn, some chips shared with Reagan. And, that’s about it. I munch off their plates while cleaning the kitchen, getting them more of whatever. I assume you’re holding me to a higher standard though since it is Accountability April and all.
So, this is what I made myself today:

One BLTAC Sandwich (bacon, lettuce, tomato, avocado and Muenster cheese sandwich with honey cranberry mustard)

Fresh strawberries and grapes

Fresh bell peppers with asiago peppercorn dressing

A french onion cheese wedge with wheat crackers

One heaping glass of milk (since I don’t get enough calcium either)
Total time to make: about 20 minutes. I was making the girls’ lunches as well. This is what I don’t like about eating healthy. It takes so much longer to prepare. I’m determined to keep it up though.
And now for dessert:
part of the edible mural Reagan made yesterday. More explanation to come later. I will not give up sweets totally while I’m trying to eat more healthy things. I don’t want to completely torture myself people.
I’d like to think I’d always eat that way if I didn’t have to pack lunch but I know I wouldn’t! Most of the time Alex is hanging on my leg while I cook so the quicker the better…
I love the mural…I’ve been craving cake lately but haven’t indulged yet.
Quoting Rob Reiner’s mom in When Harry Met Sally: “I’ll have what she’s having.” Yum. If we hop a plane now, we can be there before lunch tomorrow…so this might add to your preparation time, but I’m giving you fair warning. Oh, and Caroline’s fine with vienna sausages. 🙂
If you can get your hands on a book about a Christian who was raised Jewish called Mudhouse Sabbath. She has a wonderful section on food and the spirituality of it. It makes 20 minutes of preparation more…holy? or Godly? …Divine. Then it doesn’t seem like such a chore.
Thank you for that! It’s during those moments in the day that I consider to be distractions that I most need to refocus my eyes on Him. So, thanks for the fresh perspective!
